Abstract

Drying behaviour of Thai longan (Dimocarpus longan Lour.) was studied in flow-though mode of dryer, the air flowed through a layer of fruit from the bottom side, for observation the drying behaviour of single layer in a deep-bed dryer. Based on standard single layer model, modified page’s was simplest model for fitting drying behaviour of longan part: seed, aril and pericarp. As known as the water transportation during drying depend on the properties and structure of materials inside the fruit. Structure deformation as shrinkage was estimated in term of shrinkage ability. The simulation shows that the model, which concerns structure of fruit and dynamic behaviour of its parts, not only predicts the moisture content but also able to predicts the shrinkage inside the fruit. Including the chemical reaction of nutrient inside longan and upscaling to deepbed dryer, the optimum operation for quality parameters is possible.
