What is Food Science and Biotechnology

From milk to cheese, from hops to beer, from plants to vegan alternatives

Food science and biotechnology is part of the field of life sciences. Food consists of natural raw materials of plant, animal, and also microbiological origin. It involves the conversion of these biological materials (e.g., cereals or milk) into high-quality foods including specialty foods or dietary products. Flavors and colorants are also used to make the food tasty, safe, and appealing. In addition to the production of "traditional" foods, there is also a focus on the development of modern products (e.g., protein drinks or vegan alternatives).

The program combines biochemical, microbiological, and engineering science, but also economic contents and is thus strongly interdisciplinary. On the one hand, you will deal with the reactions that take place during the processing of natural raw materials, and on the other hand with the technical processes used in industrial food production. Sensor technology as well as data analysis (e.g., machine learning and AI) for process optimization, product development, and quality assurance also play an important role. You will also learn to consider legal, economic, and ecological aspects.

You will deal with the following questions, among others: How can new processes/technologies be used to reduce CO2 emissions in food production? How do reduced-fat foods become creamier and more flavorful? Which technologies are best suited for developing vegan alternatives to meat and dairy products without additives?

Acquiring scientific and analytical methodological competence is also an important part of your studies so you can identify problems independently in your future profession, work on them scientifically, and develop approaches to solutions.

Program content

Hands-on studies with individual specialization options

In the 1st - 3rd semester you will learn basic science skills in biology, chemistry, physics, and mathematics. These basics are essential in order to be able to understand the subject-specific content later on. Here, you will work on practical topics in the laboratory right from the start. You will also gain initial insights into food biotechnology and technologies. Contents include biochemical reactions as well as microbial, molecular biological, and analytical methods for technical treatment processes of natural substances, as well as the technical procedures for processing them.

Starting with the 4th semester, you can customize your studies and choose courses according to your interests. This allows you to create an individual profile. You also have the opportunity to integrate an internship into your studies. You can specialize and deepen your knowledge in a specific area (e.g., in food informatics, technologies of vegan alternatives or dairy, grain, or biotechnology) or you can take a broad approach and take courses from a wide variety of areas. For this you choose 5 courses from the semi-elective area and 6 courses from the free elective area.

At the end of your studies, you will write your Bachelor’s thesis. You pick experimental work in a department that has a laboratory or technical center focus, depending on your interests and inclinations.

Curriculum

NEW: Fast Track

Starting in the winter semester 2023/24, you can complete your bachelor's degree in Food science and Biotechnology in 5 semesters instead of 6. After that, there is time for a large internship, "work and travel" or start directly with the master in the summer semester. Here is an example of a study plan that can be designed individually.

What you should bring with you!

Before you begin your studies, it is helpful to double-check whether the Food Science and Biotechnology program is right for you. To apply, you must first meet formal criteria:

Here is another brief overview of the most important interests and skills you should bring with you:

  • Wide-ranging fields of interest, willingness to learn, and curiosity about science and technology.
  • Enjoy experimental as well as hands-on work in the laboratory and on technical equipment.
  • Good knowledge of scientific basics and aptitude in chemistry, biology, math, and physics: Don't worry, if there are gaps in your knowledge, pre-courses are offered and tutorials are conducted.

Practical elements during your studies

Practice must be experienced - study in a hands-on program!

Knowledge isn’t everything! You must also be able to apply what you have learned in practice. Although the focus of a university program is on imparting theoretical knowledge and the latest research results, especially in this hands-on degree program you will get enough insights into practice. Thus, the beer is brewed here itself, the bread is baked, bratwursts and ice cream are made and tasted.

Gain practical experience

Internships offer insights into companies and professional fields and give you orientation and work experience for your later career start. In this degree program, it is possible to integrate an industrial internship lasting 4 - 12 weeks. The time investment in an internship is worthwhile and makes your career entry easier. Of course we will support you with the administrative aspects, internship search, and application process.

Expand competences

To be successful in a profession, more is needed than just theoretical knowledge. Soft skills, consisting of personal, social, and methodological competences, also play an important role. We offer you an extensive range of courses for further training: Language skills, project management, communication and presentation techniques, IT and media skills, personal development, and techniques for studying and working. In addition, you can acquire practice-relevant business management skills with IBQ training. This way you can improve these skills during your studies in an uncomplicated and cost-effective way.

Learning from practice

We maintain close contacts with business from start-ups to international companies, research institutes as well as the alumni association and regularly have lecturers and guest speakers at the university. Former students report on their everyday working life and provide insights into professional fields. Direct insights into practice are also provided by excursions to companies (e.g., Rittersport, Schwarzwaldmilch, and Vetter Pharma).

Learn languages, understand cultures

Explore the world and study or research abroad for a semester. This experience is not only guaranteed to be unique, but you will also broaden your horizons while learning more about yourself and the world. A semester abroad offers a good opportunity to consolidate language skills and intercultural competences. These are particularly welcome skills for international companies. We have over 80 partner universities in Europe and all over the world.

Gain experience with start-ups

In the "Innovation Greenhouse" everything revolves around sustainable business start-ups: From idea development and evaluation to start-up and subsequent growth of the company, here you will have the opportunity to either work on an exciting start-up, or receive support for your own ideas or start-up company.

Research during your studies

Research-based learning is a wonderful opportunity to apply learned methods and skills in practice, to test your own ideas, and to find solutions to problems. You are offered a unique variety of technical projects in which you can gain practical experience in the laboratory, e.g. in bioprocess engineering, grain technology, or dairy science. In addition, you can make your own products under real production conditions in our model plants, the research and teaching dairy and distillery.
In the project “Humboldt reloaded,” you will go through all stages of a real research project, from the preparation of the current state of research and the selection of methods for your own research to data analysis and presentation.
