At the Bar California Bounge in the middle of Stuttgart, over coffee, wine or beer, he explains the causes of climate change and the role of humans as the main culprits. He addresses the demands of Scientists for Future and Fridays for Future activists and explains what measures need to be taken to mitigate climate change.

In this new, transdisciplinary and interdisciplinary EIT Food project, a tool for sustainable production planning in SME bakeries will be developed. This is based on a model created from collected production data and consumer surveys using artificial intelligence and digital twins. The tool aims to optimize the production processes in bakeries with the existing machines in a resource-saving way. Energy savings through a more efficient use of the machines due to an optimized sequence during the baking process, as well as the adapted planning of the product range based on consumer preferences leads to higher economic and ecological efficiency, i.e. lower production costs and a smaller ecological footprint. The tool also enables a reduction of food waste and thus leads to a further saving of resources in bakeries.
